- 150 gr butter (unsalted)
- 200 gr caster sugar
- 200 gr white flour
- 15 gr yeast or baking powder
- 3 eggs
- Milk as needed
Put the butter into a large bowl, then use a wooden spoon to make in small chunks and work it slowly into a cream.
Add the sugar and mix well
Add the egg yolks
Add, slowly, the flour and yeast and mix well.
Add as much milk as needed to make the dough easier to work with but not watery.
In a different bowk, whip up the egg whites until stiff.
Fold the egg whites into the dough
Use a spoon to pour into the cupcake holders and put in the over for 15 - 20 mins or until thoroughly cooked.
Make sure the milk is at room temperature. If fridge cold, it will be harder to mix and will give your dough a lumpy consistency that will be very different to rectify.
